Pho is a blend of tradition and innovation, which means it can be both comforting and challenging.

Originally, pho consisted of broth, noodles, and cooked beef.

Later, some chefs introduced rare beef.

By the late 1920s, there were debates over pho with five-spice powder, sesame oil, tofu, and kak huang, water beetle essence.
