1
Now, whilst in this beautiful country and being in the middle of Havana, how could I not give you a Cuban-inspired Cubano sandwich?
2
This thing is off the charts, but more importantly, I've learned so much this week from the Cuban people, the resourcefulness, but more importantly,
3
just the sparsity of ingredients.
4
But when you get your hands on them, it's second to none.
5
And that noise in the background is normal.
6
those beautiful 1950s old-fashioned cars is what makes up this beautiful
7
country's dna right cubano i've had many of these as i'm sure you have
8
so i'm going to sort of change this thing up a
9
little bit with a local honey from the caribbean bee
10
that has no sting but a lot of flavor the honey it tastes like mango and inside
11
that i've got a little bit of tobacco a little bit
12
of chili in there first let's start roasting my peppers
13
and onions there's no frills here the most exciting thing about
14
cooking this way down here is just let the flavors do
15
the talking really important peppers i like to start off just going all the way around
16
and that way we just cut around the seeds
17
don't over trim these things just keep them centimeter thick the secret here is in the amazing flavor of
18
that grill now you look behind me i've got
19
that what they call the lechon this is a beautiful slow
20
roasted pig it's been on there for literally 12 hours
21
and it's cooked hammock style wrapped in banana leaves
22
and i promise you the flavor is incredible
23
so open up up the onions and then get the peppers in there
24
and rub that a little bit of olive or salt pepper and I've got little tiny bits of garlic here.
25
All you do is just take the garlic and just squash and lightly crush the garlic.
26
I'm going to slice it, roast it whole.
27
It's so beautiful, really beautiful.
28
On and then in.
29
This is a sour orange, okay?
30
Again, unique locally here.
31
I wanna squeeze all that beautiful, sour tartness of that juice over those peppers.
32
And what this does now is start to sort of marinate the peppers and the onions.
33
Give that a really good mix.
34
Take that really nice and crispy.
35
And get some of that tobacco-flavored honey with that chile and the beautiful little peppers.
36
Again, slice round.
37
And let the flavours do the talking.
38
So, in, mix.
39
I love making sandwiches like this.
40
Again, look, it's not even cooked yet, but you can see the kind of flavours we're going to get from there.
41
Into the pan, an absolute piping hot pan.
42
I want it coloured beautifully.
43
Caramelised.
44
Now, I'm going to slice my pork.
45
Over to the pig.
46
So this pig has been roasted for literally 14, 15 hours, and it's been cooked hammock style.
47
So it's so tender.
48
And then it's been wrapped in the banana leaves and just literally swung.
49
So throughout the cooking process, you get the rope, that's why it's called a hammock, and you just sit here in front of the water and you just pull up and let go.
50
Pull up and let go.
51
And come on, that has to be the most glamorous pig anywhere in a hammock.
52
And look at it, it's beautiful.
53
So it goes across slowly, roasts, and just swings all day long.
54
Now a little touch of olive oil.
55
Beautiful.
56
Now I want to get some crispiness on the bread.
57
Again, hot olive oil.
58
Get that bread.
59
I want to make a nice, beautiful, big sandwich.
60
So this thing is like a meal for two.
61
Get this right, and honestly, it's like no other.
62
Now, season the inside of the bread.
63
Really important, by the way.
64
It's always seasoned on the crust.
65
But put some salt and pepper onto the bread, get that beautifully frying.
66
Look at that.
67
Oh boy.
68
And then from there start shredding that beautiful lechon.
69
I got some nice slices from the shoulder and then that's mixed with all that beautiful pork fat.
70
And look, open that up.
71
I want to get it nice and crispy, Okay, so by pulling it like this, crisping that up.
72
Again, a touch more salt, a touch of pepper, and just a little drizzle of that spicy honey.
73
And with the tobacco flavor and that chile in there, it just lifts this pork like no other.
74
Now, have a look at this.
75
Look.
76
Get this pork really nice and crispy.
77
The nice thing about this is you don't need the expensive cuts.
78
This is the sort of.. the cheap cuts.
79
I've got a little bit of shoulder here, a little bit of the butt, a little bit of the neck.
80
And look, get that really nice and crispy.
81
Bread toasting up nicely.
82
You can see that is the start of a beautiful Cubano for those peppers.
83
That pork is getting all nice and crispy.
84
Look at the bread.
85
Again, nice and crisp.
86
And this is where the Cubana goes up a notch.
87
I'm going to get some really nice mustard.
88
Okay.
89
And I'm going to spread the mustard on top of my toasted.
90
You can hear how crispy that is, the baguette.
91
Now I'm going to do this both sides.
92
Why?
93
because this is a beautiful honey mustard and it's so delicious
94
but I don't like that raw sort of flavor from
95
that mustard so I go back into the pan now and caramelize that mustard
96
and just literally get that on there and it just creates this amazing layer.
97
Look at those peppers.
98
Beautiful.
99
Really nice and crisp.
100
They're ready to go, they come off, and then a little lime and zest over those peppers.
101
Lime zest, so I'm going to make this a really nice fragrant Cubano.
102
Lime squeezed over and honestly just that freshness at the end is just incredible.
103
That lime and the zest is just beautiful.
104
now look at my uh my pork oh my lord crispy delicious and check this out
105
that beautiful caramelized mustard and that puts another layer on there okay we've got my base
106
look at that that's so good oh my lord that is so good first off some lettuce
107
I just want a touch of texture under here in down
108
and on and use the center you're only doing this once
109
so make it very special so I love using these little hearts of this little cause lettuce
110
then from there I'm going to start the build up that crispy pork okay get that on there Oh my goodness.
111
It's so good.
112
Beautiful.
113
Lots of pork, okay?
114
That's the essence here.
115
And this is where it starts going up a level.
116
Get your onions, peppers, garlic, and sit that on top.
117
Try and lay the peppers out so they sort of go red, green, red, green.
118
And look at the colors there. So beautiful.
119
You see those tiny little speckles of garlic.
120
The garlic is so sweet at that age.
121
And we've got the peppers the honey laced with
122
that tobacco just drizzle that over and just let
123
that seep in now a secret ingredient this is a local pollen it's a bee pollen
124
and it's from these incredible caribbean bees i'm just going to sprinkle the pollen inside
125
and it's going to give this sort of acidic lift to this Cubano.
126
It is so good, honestly.
127
Finally, bring the heat down.
128
I've got some lovely pickled cucumber here, lightly drain them, and then just sit that, intertwine it a little bit,
129
sort of lift up the onions and the garlic and just hide that beautiful pickling.
130
Look at that.
131
I mean, we haven't even finished this sandwich yet, and look Look how good it looks.
132
Right, the final coat of arms is the gouda.
133
Gouda is a staple in a Cubano.
134
So take your slices of gouda or gouda, depending where you are, sit that on top of your bread.
135
Give it a touch of seasoning.
136
Press that in.
137
And just go back into the pan, literally, for 30 seconds.
138
I call this the cheese skirt.
139
And it is just incredible because, look, this gouda, gouda, melts.
140
And we have this beautiful,
141
cheesy, delicious, incredible finish to the sandwich. And look. That is ready.
142
that's my glue that literally sticks this beautiful cubana together push that down as that gouda
143
firms up it sticks the whole sandwich together
144
and then watch in and look at that seriously I
145
I promise you that has to be one of the most delicious cubanas anywhere in the country.
146
And that certifies I am not an idiot sandwich.
147
Buon appetito.

「it's been on there for literally 12 hours」のような長い文は、区切りを見つけてゆっくりと発音しましょう。
