at first glance banh chong kun ti heo looks simple a thin sheet of rice paper a few slices of pork,

a handful of greens, but to create a roll that is truly Da Nang, every detail has to be carefully chosen.

From the rice paper, the pork, and the fresh herbs, to the dipping sauce, each ingredient plays a role.

The pork used for rolling is usually pork belly or pork shoulder, with just the right amount of lean meat and fat,

so each bite stays tender and juicy.

The pork is gently boiled until just cooked, preserving its natural sweetness, then thinly sliced so that when rolled,

all the flavors come together smoothly.

Rice paper, the base that may seem simple, actually holds everything together.
